While Chef Andre Bienvenue is no crab himself, he is the executive chef of Joe's Stone Crab, whose claim to fame is being the busiest independent single restaurant in the U.S. How busy you ask? - 2,000 people per day busy. In addition, the restaurant ships about 300 pounds of fresh stone crabs daily across the nation and next door to this overflowing eatery is the take-out shop providing the full menu as well.

As executive chef, Andre also has the responsibility of managing a very large staff - 137 people to be exact. Andre has appeared on television including the Food Network and has been featured in several cookbooks, with his own in the works as well. Chef Andre Bienvenue provided interesting dishes to the crowd including mojito foam shots with jello and midori topped cantaloupe over lobster with pop rocks (yes - the popular candy) in spoons seen here on the table.
